How tip-outs usually work
Most houses tip out either as a percentage of your tips (common: 20–30 percent split across the team) or as a percentage of your sales (common: 3–6 percent total). Sales-based tip-outs are riskier for you on slow-tip nights, because you owe the percentage even when the tips didn't come. Whatever your house does, log the tip-out every shift: it reduces your reportable tip income, which matters at tax time.
